Tomatillo Salsa



  • 12 medium tomatillos, outer husks removed, rinsed, finely chopped
  • 1 small red onion, finely chopped
  • 2 to 3 fresh serrano or other small green hot chilies, stemmed, seeded, finely chopped
  • Β½ cup fresh cilantro leaves, chopped
  • 1 tablespoon virgin olive oil
  • 1 teaspoon white wine or champagne vinegar
  • 1 teaspoon salt


Mix all the ingredients together and let sit for 30 minutes to allow the flavors to blend.
