Lobster and Rocket Salad



  • ¼ cup fresh lemon juice
  • salt and freshly ground pepper
  • ½ cup hazelnut or walnut oil
  • 1 cup cooked Maine lobster meat (method 2)
  • ½ cup tomato concasse
  • 1 cup mayonnaise
  • 2 cups rocket (arugula) leaves
  • 1 green bell pepper, roasted, seeded, peeled
  • 1 red bell pepper, roasted, seeded, peeled


Mix the lemon juice with salt and pepper to taste in a bowl. Whisk in the oil. Add ¼ cup of the dressing to the lobster meat and marinate 30 minutes. Mix the tomato concasse into the mayonnaise and season.

Toss the rocket in some of the remaining dressing. Cut the peppers into shapes, dip in the remaining dressing, and put around the lobster. Arrange the lobster on the rocket. Serve the mayonnaise separately.
