No one knows why this popular drink is called la paloma—the dove. It may have been in homage to a lovely woman. Or perhaps it is the pale color and smoothness of this easy-drinking combination that inspired the name. Don’t be fooled, though—this drink is seductively potent. Overindulge one evening and the next morning you may find yourself broke and alone, wondering who she was. Use an excellent tequila with a sharp, edgy character. The pinch of salt gives the cocktail perfect balance.


  • Ice cubes
  • Pinch of kosher salt
  • 2 ounces 100 percent agave blanco tequila
  • ½ ounce fresh-squeezed lime juice
  • Mexican Squirt (or grapefruit soda such as Fresca), chilled


Fill a 12-ounce tumbler with ice. Sprinkle the salt over the ice and add the tequila and lime juice. Top up with the grapefruit soda, and garnish with a lime wheel.
