I’d had so many variations on breaded, crumbed, and battered seafood tacos that I began to wonder why there wasn’t a chicken nugget taco, and that line of thought led me to that Texan staple, the chicken-fried steak. It’s a logical leap from the traditional fried fish taco, and more to the point, it is delicious: crunchy, spicy, and creamy—a great example of familiar ingredients coming together to make something new. For a truly indulgent treat, add a slice of avocado.
