At last, this exquisite, unusual dessert makes use of dates (and Medjool, the best quality available), once a classic product of the desert-like conditions of eastern Andalusia. Today the fruit is, sadly, rarely picked so try and source Palestinian dates from Jericho, which are excellent. Here, combined with the labneh, the Middle East sings loud and clear. You will need to start the recipe the night before.
