Method

An American breakfast favourite of crisp fried potatoes, here given a Southern twist with Cajun spices. Hash browns are not just breakfast fare. Serve them for lunch with a crisp green salad.

Preheat the oven to 190°C/375°F/gas mark 5. Cook the potatoes in boiling salted water
