Infusing spirits with fruits, herbs, and spices is an age-old technique that is regaining popularity. You can also use spirits to preserve fruits—for two great recipes.
A mild-flavored alcohol like vodka is a good choice for infusing, as it doesn’t overpower the infused flavors. Gin, white rum, brandy, grappa, and sake also work well. To create flavorful infusions, try
