Every culture seems to have its own version of rice pudding, and Parsis are no exception! A simple and healthy dessert to serve at family meals or for larger crowds, Doodh Pak is a milky almond and rice pudding, flavoured with vanilla or rose water, and cardamom powder. It is often served with fresh puris (fried bread).

Ingredients

  • 8 cups whole milk
  • 1-cup plus 1 tbsp of sugar

Method

In a large pot, heat the milk and stir in the sugar until it is all dissolved. Bring to a boil and then add the ground almond and crushed rice. Lower the heat and allow this to cook for half an hour, stirring from time to time.
