    BBQ

    • ribs
    • fatty skewers (like pork belly)
    • chicken wings
    • chicken on the bone
    • large joints of meat

    Grill

    • steaks
    • pork or beef fillet
    • yakitori or skewers
    • grilled vegetables
    • whole fish

    Method

    Buy a big and deep BBQ – less flare ups. Use a charcoal chimney to start coals – no lighter fluid.

    Lump hardwood charcoal is best – burns hotter and longer and is cheapest. Stock up on disposable drip trays for indirect heat.

    Clean well with a brush before starting cooking.

    Don’t turn the meat too much – let it char on one side, then roll over.

    Look after your food – don’t leave the scene!

    Wait for the flames to die down + grill over the glowing coals.
