Fougasse, or “ladder” bread, is an attractive flatbread from the south of France. The sunny flavor of sundried tomatoes permeate the dough here and the addition of gruyére cheese adds yet another interesting dimension to this Mediterranean favorite, while Thai basil and XO sauce add an Asian twist.

Ingredients

  • ¾ cup (200 g) grated gruyére cheese
  • Olive oil, for brushing

  1. First make the Dough by dissolving the yeast granules in the warm water. Combine the milk and water, and whisk in the dissolved yeast. Mix in the flour and salt using a mixer at slow speed for 5 minutes. Before the last 30 seconds, add the olive oil. Flour your hands, remove the Dough and form it into a ball.
