This bacon is great served as an hors d’oeuvre with a cocktail, on a sandwich with lettuce and tomato, or alongside sauerkraut and mashed potatoes. Sweet honey and slightly spicy Dijon mustard pair beautifully with bacon.

Preheat the oven to 350°F (175°C). Lay the bacon on wire racks over rimmed sheet pans and bake for 10 to 15 minutes, until the bacon has rendered some fat and is starting to color on the edges.

Remove the bacon from the oven and pour the rendered fat through a sieve and save for another use.

Apply a thick coating of the honey mustard glaze to one side of each slice of bacon and return the baking sheet to the oven for 5 minutes. Remove from the oven, apply a second coating of glaze to each slice of bacon, and bake for an additional 5 minutes.

Let rest for 30 minutes or serve immediately.
