Yes, guacamole made it into the “Hold the Bacon” chapter, but that doesn’t mean that you can’t add bacon to yours. We certainly do at the restaurant. It’s sprinkled right on top so it doesn’t lose its crunch. I included a BLT variation too!
Scoop the avocados into a bowl. Add the onion, jalapeño, lime juice, and salt and pepper to taste and coarsely mash with a fork. Fold in the cilantro and serve immediately.
For BLT Guacamole, fold in 1 seeded and diced plum tomato and 4 slices crisp cooked bacon, coarsely chopped.
