  • About

These are my pick-me-ups when I need a bit of energy while working the line at BB or after a workout or when I don’t have time for a proper breakfast in the morning. These will also be the star of your kid’s lunchbox, and you will be the apple of your kid’s eye. Pack extra so he/she can sell them and make some money.

  • 3 tablespoons unsalted butter
  • 1 (16-ounce/455-g) bag large marshmallows
  • 4 cups (485 g) Bacon Granola
  • 1 cup (175 g) milk chocolate or semisweet chocolate chips

Spray a 9 by 13-inch (23 by 33-cm) baking dish lightly with nonstick spray. Set aside.

Melt the butter in a large pot (nonstick, if possible) over medium heat. Stir in the marshmallows and cook, stirring occasionally, until completely melted, about 7 minutes.

Remove from the heat, fold in the granola and chocolate chips, and mix until completely incorporated. Scrape the mixture into the prepared dish, pressing down slightly until the top is even. Let sit for 15 minutes, then cut into bars. The bars will keep, tightly covered, for up to 3 days.
