It took a bit of trial and error to come up with a plant-based caramel as rich and indulgent as our dairy version, but in the end we found condensed coconut milk gave the best result. You can’t really taste coconut, but it gives the caramel a richness and lovely colour.
Follow the method, but once the caramel starts to look frothy all over set a timer for five minutes and keep boiling, stirring all the time. Test it, and if it’s not quite ready boil for another minute and test again. Repeat until it stays in place on the plate.
