These delicate layered cookies are a dessert in themselves. They are made from an almond shortbread sandwiched with apricot or raspberry preserves, then finished with more preserves. If the butter isn’t extremely soft, the dough won’t hold together. If necessary, add up to 1 teaspoon of water but no more. Be careful not to overbake the dough or the Linzer augen will be hard and dry.
