A variation of the ever-popular palmier, or elephant ear, these are more tailored and elegant in appearance.

Method

  1. Cover the work surface with half the sugar, then top the dough with the remainder, and, according to the instructions, roll to an 20 x 30cm rectangle. If the dough gets soft, slide it onto a baking sheet and refrigerate it for 15 minutes.
  2. Use a sharp pizza wheel to trim the edges of the dough. Fold each of the 30cm sides
