Fragile and delicate in the extreme, these biscuits are a labour of love to make because you need to bake them one tin at a time on the centre rack of the oven. If you have a double oven, start to bake another tin a couple of minutes before the first tin is ready to come out. These spread best on a bare buttered tin; brush the tins with very soft but not melted butter. If you don’t mind biscuits that are a little thicker, you may use silicone mats to bake them.
