Drop biscuits are among the simplest to prepare. As their name implies, you just drop the dough from a spoon onto a tin and you’re finished shaping. Piped biscuits take the method a small step further and drop the dough onto the tin through a plain or decorative tip fitted in a pastry bag. Piping biscuits isn’t difficult, but like any new technique, it takes a bit of practise to master. Besides the information and photos here, we have a video about piping on my website, www.nickmalgieri.com, so you can easily see the steps and motions involved.
