Kouigns Amann: Souffléed French Toast

Stale (2 days or older) kouigns amman make fabulous souffléed French toast. For every 2 kouigns amman (8.5 ounces/240 grams), make the following custard mixture.


3 large eggs ½ cup plus tablespoons (140 ml) 5.3 ounces 150 grams
heavy cream cup (79 ml) 2.7 ounces 77 grams
milk 2 tablespoons (30 ml) 1 ounce 30 grams
pure vanilla extract 1 teaspoon (5 ml) . .


Make the custard

Split the kouigns in half lengthwise. In an ovenproof baking dish just large enough to hold the kouigns in a single layer, whisk together the eggs, cream, milk, and vanilla. Place each kouign half, cut side down, in the custard. Cover tightly with plastic wrap and refrigerate for 8 hours or overnight.

Preheat the Oven

Twenty minutes or longer before baking, set the oven rack in the middle of the oven and preheat the oven to 350°F/175°C.

Bake the French Toast

Cover the baking dish loosely with aluminum foil. Bake for 10 minutes. Remove the foil and continue baking for 5 to 10 minutes, or until an instant-read thermometer inserted into the center of one of the kouigns reads 160°F/71°C.
