This is my best whole wheat bread. It is healthful, wheaty, full of flavor, and has a great texture. It is also an excellent bread when made without the walnuts. The walnut oil, however, produces a more mellow flavor and a slightly higher rise. Sliced thin, this bread is an ideal accompaniment to cheese, especially to blue cheese.

Make the Dough Starter

In a large bowl, or in the bowl of a stand mixer fitted with the whisk beater, place the water, honey, flour, and yeast. Whisk until very smooth to incorporate air, about 3 minutes. The dough starter will be the consistency of a thin batter. Scrape down the sides of the bowl.
