This is an homage to the famous Pepe’s in East Haven, Connecticut. The person who introduced me to Pepe’s was my dear buddy Jeff Salaway, a fellow gastronome and intrepid eater. Jeff and I had many things in common. But our number-one passion was Italian food. We tried to eat at Pepe’s one night and they were full, so we ate in the annex. The huge pie was lightly burned, with extremely fresh chopped clams, garlic, and Parmesan. It wa
