These sassy bagels are also known as water bagels. If the secret ingredient, as New Yorkers brag, is the water, then we out-of-towners are out of luck. Minus the Hudson River, these bagels are still as authentic as you can get without buying them from H&H Bagels!
In a mixer bowl, whisk together water, yeast, and sugar. Let stand a couple of minutes to allow yeast to dissolve. Briskly whisk in in oil, malt and one cup of flour. Add salt, then most of remaining flour, kneading 10-12 minutes to make a very stiff dough, adding in more flour if required.
