Fruit curd is one of my favorite pastry components! Lemon curd is the most common type, but you can utilize any tart fruit juice to make a fruit curd. Lemon, lime, orange, cranberry, and grapefruit juice all work well. Make sure that, if you use bottled juice (for instance, cranberry juice), it’s the kind that is unsweetened and 100 percent juice. I love a very tart curd, so I typically will use at least some lemon juice in any curd I make.
