Ingredients: 450 g golden caster sugar; 50 g dark chocolate chips; 3 tbsp cocoa powder; 450 g unsalted butter, really soft, diced, plus more for the tins; 2 tsp vanilla extract; 300 g icing sugar, sifted; 150 g 55% cocoa solids chocolate, or 2 tbsp cocoa powder, sifted; 225 g unsalted butter, really soft; 2 tsp baking powder; 1 tsp vanilla extract; 8 eggs, lightly beaten; 450 g self-raising flour

Method

Preheat the oven to 150°C/fan 160°C/300°F/gas mark 2. You will need three 20cm round sandwich tins. Butter the tins and line the bases with baking parchment. If you have only two tins, make the cake batter and divide it into three batches, baking the third last.
