This baby is big, like the city it’s named for, and it’s almost as busy, with a multitude of fabulous, bright flavors. A traditional New York–style cheesecake is one that has a graham-cracker crust and a batter made with just eggs, sugar, cream cheese, and sour cream or heavy cream. This recipe uses both heavy cream and sour cream, and the crust is made with ground almonds and amaretti cookies. This version will surprise you, no matter where you live.
