  • About

The pastry layer that forms the base of this cake sets it texturally apart from your standard cake, giving it tart vibes. Fresh thyme lends its gentle herbal notes to lift the apple, but the real hero here is the rum butterscotch sauce, which brings a warming heat and is so delicious it’s hard to stop yourself pouring a bit more, and a bit more, and a bit more... Go on, treat yourself.

Question from Fay
Here in Australia our pastry comes with plastic between the individual sheets. Would one need to put the pastry with a sheet of parchment paper or similar underneath when cooking? Or ignore the pastry bit and just make double of the rum sauce and drink it with a straw? ;)

from United Kingdom

Hi Fay. Yes, in the UK sheets of ready-rolled puff pastry come wrapped in a kind of parchment paper, so that would be the way to go I think.
