Name: Homemade Sriracha
Yield: Makes about 1 cup (240ml)
Ingredients: 2 medium shallots, minced; 4 to 5 medium cloves garlic, crushed or minced; 1 tablespoon vegetable oil; 2 (8-ounce / 227-g) cans tomato sauce; 3 tablespoons sugar; 3 tablespoons rice vinegar; 1 tablespoon fish sauce (see Notes); 1 cup (about 100g) Thai red chile peppers, or to taste (start with half this amount for a milder sauce), stemmed and minced fine (see Notes)
