Fragrant Orange-Vanilla Muesli

During an epic ninety-five-recipe shoot with a client, we were flooded with back-to-back dishes to photograph, but thanks to an incredibly organized team of chefs, we were able to flow through the shots very easily—that is, until the muesli dish came out to the shooting table. All of a sudden, the shoot came to a halt. We asked to have a taste of the muesli, and it was so good that the shoot was stalled until we had finished the whole bowl. We had forgotten how much we love muesli, a dish made of uncooked oats soaked in milk, yogurt, or juice and then topped with fruit or nuts. Muesli stands as one of our favorite breakfasts. Our inspired version here is soaked in fresh orange juice and topped with fresh orange slices and a heaping serving of nuts and fruit. We call it our Mighty Muesli.


  • 2 cups (180g) old-fashioned oats
  • ¼ cup (45g) dried cherries
  • ¼ cup (48g) dried apricots, cut into pea-size pieces
  • 1 cup (240ml) fresh orange juice
  • 1 cup (240ml) milk
  • ½ cup (120ml) yogurt
  • ¼ cup (60ml) honey, preferably orange blossom
  • ½ tablespoon vanilla extract
  • ½ cup (60g) roughly chopped pistachios
  • 1 tablespoon brown sugar
  • 2 to 3 oranges



  1. In a bowl, combine the oats, cherries, and apricots. In a separate bowl, mix together the orange juice, milk, yogurt, honey, and vanilla extract. Add the liquid mixture to the oat mixture and stir to combine. Cover and refrigerate for 8 hours or overnight.
  2. In a small bowl, combine the pistachios and brown sugar and set aside.
  3. Slice the oranges into segments: Cut off the top and bottom of each orange down to the pulp. Standing the orange up on the cut end, slice off the remaining peel and pith. Cradling the orange in your hand, carefully slice along each side of the dividing membranes to cut out the segments.

To serve, spoon the muesli into bowls. Top with the pistachio mixture and the orange segments.
