If using fresh guavas, cut the fruit in half and scoop the pulp from the shells.
Place the guava pulp, maraschino syrup, and sugar in a saucepan over medium heat and bring to a boil. Reduce the heat and simmer for 10 minutes or until the sugar is dissolved. Strain and chill (see Note). Serve with the mousse.
