A sophisticated brunch dish which may be served with grilled tomatoes, some watercress or a green salad. This would also make an elegant first course for a lunch or dinner party.
Preheat a grill to a high heat. Place the almonds into a food processor and blend for 30 seconds, or until they resemble fine breadcrumbs. Turn out onto a baking tray and place under the grill to toast. Do not walk away while this is happening as the almonds will burn very quickly. Season the toasted almonds with a little salt and pepper.
