These individual American cornbreads are quick to prepare and taste delicious served warm. As an alternative, try serving with a bowl of hearty soup for lunch on a cold winter’s day.

Method

  1. Preheat the oven to moderate 180°C (350°F/Gas 4). Prepare a 12-hole (125 m¼ fl oz capacity) muffin tin by buttering well or lining with paper cups.
  2. Sift together the cornmeal, flour, sugar, baking powder and salt into a bowl.
  3. In a separate bowl,
