Caesar Salad was created in 1924 by Italian-born chef Caesar Cardini at his restaurant in Tijuana, Mexico. Nothing more than a cos lettuce salad with garlicky toasted croûtons, dressed with garlic-scented olive oil, lemon juice, grated Parmesan cheese, a dash of Worcestershire sauce, and a partially cooked ‘coddled’ egg, the recipe has been modified in the intervening years to contain anchovies, crumbled bacon, and more recently strips of grilled chicken, fish or shellfish.
