In Italy a panino (the singular) means roll. Today it has come to mean any one of a wide variety of sandwiches made on rolls, sliced firm textured bread, or even focaccia. Alessandro Frassica, owner of ‘ino, a panino shop in Florence, told me that most of his panini are made on ciabatta rolls, though focaccia and Pane Sciocco, the Tuscan salt-free bread, are also popular.
