During the three summer seasons I spent working at the Sporting Club in Monte Carlo in the mid-seventies, we didn’t start work until 3p.m. We young cooks would spend the morning on the beach in front of our residence hotel or at the nearby Plage da Larvotto, Monte Carlo’s fancy public beach. Dinner was provided at work, so most of us would save money by having a mid-morning combination of breakfast and lunch, and more often than not it was a pan b
