  • 1 bunch fresh mint
  • Sugar for serving (optional)


    If desired, set aside 2 lemon verbena sprigs for garnish. In a teapot, combine the remaining lemon verbena sprigs and the mint. In a saucepan, bring 3 cups (750 ml) water to a boil over high heat. Pour into the teapot and let the tisane steep until it reaches the desired strength, 3-5 minutes.

    Strain through a tea strainer or a fine-mesh sieve into 2 teacups. Garnish each cup with a lemon verbena sprig, if using, and serve. Pass the sugar at the table, if desired.
