Evoke the scents of a Tuscan hilltop stroll (or a shuffle through a supermarket fruit aisle) with this classic citrus combination. It’s a bright, crisp, zest-fest and a cut above your average plonk. It will, however, benefit from a slightly longer maturation time to round out those sharp, citrus notes. Ferment, bottle… and be patient.

Ingredients

  • juice and zest of 4 unwaxed lemons
  • juice and zest of 4 unwaxed limes

Method

  1. Put the lemon and lime zest in a sterilized fermenting bin. Take care not to include too much white pith, as this will result in unwanted bitterness.
  2. Add the lemon and lime juice to the fermenting bin.
  3. Add the sugar, raisins and tea, and give the mixture a stir.
  4. Boil 4.5l/157fl oz/18 cups water in a separate pan, then add to the fermenting bin,
