Of the many plants that possess an aniseed flavour, fennel is our favourite. It’s easy to grow, looks good in the garden with its feathery leaves and yellow flowers, and the seeds, leaves and bulbous root are all edible. We’ve recruited the seeds for this recipe in a supporting role to the wild, plummy flavours of the damson – they bring out its fruitiness and give the drink a sumptuous, sweet caress of aniseed at the finish.
