The combination of smoked salmon and cabbage works rather like cabbage and bacon - you only need a small amount of smoked salmon or the flavour takes over. Use smoked salmon trimmings, or even trimmings from hot smoked salmon - Braden rost.

Ingredients

  • 1 small head of Savoy cabbage, trimmed
  • salt and freshly ground black pepper
  • a couple of good knobs

Method

Quarter, core and finely shred the cabbage. Bring a pan of salted water to the boil and blanch the cabbage for 2-3 minutes, then drain well.

Meanwhile, heat the butter in a large pan and gently cook the onion for 3-4 minutes, stirring every so often, until soft. Add the cabbage and season with salt and pepper. Cover the pan and cook over a low heat for about 8-10 minutes, stirring every
