When you have great wild ingredients at hand, it makes sense to use them. Both young nettles and wild garlic are abundant at this time of year and easy to gather — just remember to take a rubber glove with you for gathering the nettles. And don’t worry, cooking takes the prickle out of young nettles so they aren’t going to sting your throat on the way down.
