After visiting Japan and eating tempura at Japanese restaurants in London, it dawned on me that samphire must be delicious deep-fried - a bit like the famous shredded zucchini they serve at Harry’s Bar in Venice. And it is... perfect as a snack, starter or side dish for fish. If you can get your hands on some fresh Morecambe bay shrimps in the shell, coat them in the batter and deep-fry them with the samphire for a really tasty starter.
