This is a great standby for many desserts, ice creams and drinks. You can make it as strong as you like - just add more elderflowers to the infusion for a more intense flavour. If you want to make a syrup that’s going to keep (like this one), then you will need to put in a fair amount of sugar to preserve it. Once made, simply dilute with fizzy or still water for a refreshing cordial, or try a splash in a glass of Champagne or sparkling wine for an aperitif.
