Some people find the sourness of gooseberries a bit off-putting, but they make really great desserts. With the exception of the red dessert variety, these berries need to be cooked with sugar. The elderflower gives them a complementary summery fragrance.
To make the pastry, beat the egg yolks and butter together in a bowl until evenly blended, then beat in the sugar. Stir in the flour and knead together until well mixed. Wrap the pastry in cling film, flatten and leave to rest in the fridge for an hour before use.
