Ray with Periwinkles and Ceps

Rays, commonly referred to as skate in fishmongers, are among my favourite eating fish. Here I’ve teamed them with winkles and ceps to give a complete earthy dish. You may need to order a sustainable ray (spotted, cuckoo or starry) and fresh winkles from your fishmonger in advance. And, if you can’t find or forage ceps, then replace them with another wild mushroom.
