Don’t miss out on these lovely little green plums with their sweet-scented flesh at this time of the year. My friend Charles Campion brought me a couple of jars of these pickled greengages as a gift a couple of years ago. Having wild fruits on your doorstep is one of the great things about living in the country.

For this recipe, you need to select slightly under-ripe gages, as ripe ones will just dis
