The grey mullet, which are seen in the muddy tides of Cornish estuaries, are not such delicate fish as the bass, but are still highly thought of by those who know their fish. Since they are now more widely available, here is a very good traditional recipe; if possible choose the smaller fish, and be sure to ask the fishmonger to clean and scale them for you.
