The soufflé, while not being a British invention, has been one of the favourite lunch or supper dishes of the British for well over a century - one of the best and most characteristic being a smoked haddock and cheese soufflé, a flavour combination of which Arnold Bennett was particularly fond (see Arnold Bennett’s omelet).
