  • 1.5 kg (3 lb) leg of pork, fillet end (top of leg)
  • oil for rubbing on to crackling

Method

Ask the butcher to score the crackling in narrow strips all over. Rub with oil. Place the pork in a roasting tin and roast at 190°C, 375°F, Gas Mark 5, for 30 minutes.

Meanwhile peel the potatoes and drop them into boiling salted water. Let them cook for 10 minutes. Drain them well and put them into the roasting tin with the peeled and quartered onions and peeled, quartered and cored ap
