A piece of quince, if you can obtain this hard winter fruit, bright yellow and sweetly scented, gives a lovely old-fashioned flavour to apple pie; but if you can’t don’t worry. The aroma of the cinnamon and cloves alone will give the apples an extra fillip.

  • 675 g ( lb) cooking apples such as Bramleys

Method

Peel the apples (and quince if you have one), quarter and core them. Place the quarters in a small casserole with the sugar, butter, spices, lemon peel, and a tablespoon of water (and the piece of quince if you have it). Cover the casserole, bring it to the boil and then let it simmer very gently either on top or in the oven for 30 minutes until the apples are like amber, and fairly dry. Let th
