These are the white fluffy buns piled high with clotted cream and strawberry jam, that holiday-makers in Devon hope to be offered when they see the sign ‘Cream Teas’. They are much more easily made, in fact, than the difficulty of actually finding a teashop that will serve them would suggest.

Method

Warm a large bowl. Melt the butter and let it cool. Stir the sugar into the warm milk until it has dissolved.

Mix the yeast in a small bowl with 3 tablespoons of sweetened milk. Put it in a warm place until it froths. Meanwhile put the flour in the warmed bowl and make a well in the centre; sprinkle the salt round the edge. Pour in the yeast, milk and melted butter and mix well to a sof
