This is an excellent marmalade for the end of the year, when you may run out of your home-made Seville orange marmalade before Seville oranges have come back on the market stalls.
Cut the fruit in half and scoop the pips into a small bowl with a teaspoon. Cover them with water arid leave them to soak overnight, to give up their pectin. The fruit, peel, pith and pulp can be cut up by hand into fine slivers, or minced through the coarsest blade of the mincer. Put them in a bowl, pour on 1.2 litres (2 pints) of water and leave this too to stand overnight.
